Your best bet is to go to villages around flourishing cities. Most villages don’t have cattle so it may take a few tries finding villages with them. You can get cattle by going to the village elder and select the ‘buying supplies’ option. Steal/buy cattle, click on cattle, tell cattle to go, stand in the opposite direction that you want the cattle to go, don’t lose them as you direct them to the target. In other words, no you can’t sell cattle. It appears that the idea is that you are supposed to drive the cattle to the nearest city where fresh beef will garner you the most denars, and then slaughter them outside said city and then sell the beef. The cows will then basically run away from you, and you need to herd them to the correct location. You «talk» to the cows on the map, select the option to drive them forward.
